CORN CUTLETS

Ingredients: Corn 1 cup (200gmns ) fresh or frozen. Groundnuts  200gmns.  Soya sauce (30ml)  mashed potatoes. 150 gmns  Corn  flour, salt to taste, oil for frying.

Method: Grind the corn and the groundnuts to a paste.  Add the remaining ingredients. Divide the mixture into 16 portions. Roll each portion into a ball and slightly flatten the ball. Heat oil in a pan and fry the cutlets till done. Serve hot with peanut sauce or green chutney.

CORN BASKETS

Ingredients: Basic corn filling 3 cups. For the baskets. Flour 200gmns. Milk 1 cup milk .Salt to taste. Sugar ¼ tspn.  Egg 1 no. Oil  for frying.

Method: Mix all the above ingredients, except oil, thoroughly to obtain a smooth, thick batter. Heat the oil in a kadai. Dip pancake moulds in hot oil and then dip in the batter. Put the mould into the oil again. Loosen out and remove the basket from the mould with the help of a knife. Fry the basket till golden crisp. These baskets may be made ahead of time and stored in an airtight container. To serve fill the baskets with the basic corn filling and garnish with coriander leaves. Serve with chilli sauce, ketchup or green chutney.

CORN TOAST

Ingredients: Bread slices 4 nos. (preferably a day old) 1 egg 1 ½ cups basic corn filling. Cornstarch 11/2 tspn. Spring onions sliced 2 tspn, Ginger paste ½ tspn Sugar ¼ tspn. Soya sauce 5 ml. oil for deep frying.

Method: Trim the bread slices. If the bread is fresh arrange the slices in a single layer on a cookie sheet. Let stand for an hour. Turn over and let stand for another hour.  Beat the egg in a bowl, add  the corn filling mixture, cornstsrch, spring onions, ginger paste, sugar and soya sauce. Mix well, Spread about two to three tspns of the mixture on each bread slice. Cut  each slice into four triangles. Heat oil in a kadai and fry the triangles till golden brown. The corn toast may be kept warm in an oven.

CORN CHOWDER

Ingredients: Chicken broth 600ml. Potato chopped 100 gmns, Creamed corn 150 ml. Corn kernels 150 gmns. Celery 1 stalk chopped. Chicken soup 1 packet, prepare as per directions. Butter 10 gmns. Cooking cheese 80 gmns. Salt and black pepper to taste a handful of coriander leaves, chopped for garnishing.

Method: Heat  butter in a pan and fry the vegetables for a few minutes. Add the chicken broth and cook till the vegetables are tender. Prepare the packet chicken soup mix cheese add cook on low heat for a few minutes or till the cheese melts. Add salt and pepper to taste. Garnish with coriander leaves. Serve hot with garlic bread.

CORN KORMA

Ingredients: 1 cup or 200 gmns Creamed corn kernels. Oil 50 gmns. Bay leaf 1 no. Grated onions 100 gmns. Turmeric pwd a little,  salt to taste, Tomato puree 1 cup Coriander leaves chopped fine.

Method: Cook the corn kernels till done. Heat oil and add bay leaf. Add the onions and fry till light brown. Add tomato puree and the corn mixture. Simmer for seven minutes. Hot with chapatti’s. Garnish with coriander leaves and serve.

CORN SALAD WITH MACARONI

Ingredients: Corn (cooked) 250 gmns.   Cooked   macarooni 250 gmns. Capsicum 1 no, chopped fine. Boiled egg 1 no chopped fine. Chopped celery of I stalk. Boiled Diced chicken 150 gmns Tomato 80 gmns (diced ) Cucumber  diced 80 gmns. Carrot 50 gmns chopped fine. Diced Paneer 150 gmns. Lettuce shredded. Mayonnaise 300 ml.

Method: Toss all the ingredients except mayonnaise together in a large salad bowl. Then mix the mayonnaise.

SHAHI CORN KORMA

Ingredients: Small corn on the cob, cut into 4 pieces. Coconut  milk 1 cup. Ginger paste 3gmns. Tomato puree 100ml. Coriander powder 3 gmns  turmeric a little.  chilli powder ¼ tspn garam masala powder. Amchur powder a little, salt to taste,. Oil 30 ml. Mawa crumbled 25 gmns  crumbled. Coriander leaves chopped.

Method: Cook or pressure cook the cob pieces in milk with a pinch of turmeric powder. Blend the tomato puree, coconut and the ginger. Heat oil and fry the tomato mixture till almost dry. ower the heat and add coriander powder, turmeric powder, chilli powder, garam masala powder, amchur powder and salt. Stir and cook for a few minutes. Add the milk in which the cobs were cooked. Stir continuously till done and dry. Add one cup water and cobs, and cook for a minute. Garnish with coriander leaves. Serve hot with rice or chappaties.

Banyule Flats, Viewbank: The Bangalore Lions won the Easter Cricket Tournament organised over the Easter Long Weekend, by the Karavali Club, Melbourne.
 
The participating teams were Sydney Strikers, Brisbane Lions, IFCA, Tiranga, Jai Hind, Manglore Friends, Sydney Challengers, Banglore Lions and Karavali Club. The Finals was played between Karavali Club and Bangalore Lions.
 
All the matches were played at the scenic Banyule Flats Ovals in Viewbank (Melbourne). The weather was perfect, and cricket played was even more fantastic. The organising team comprising of Daya Shetty, Nishikant Semitha, Manish Bhandary, Rajesh Rai, Shashank Shetty, Gangadhar Bevinakoppa and others did a fabulous job by organising the cricketing fiesta.

Political League will always come first and takes priority over Indian Premier League” according to Dr. M S Gill, Minister of State for Youth Affairs & Sports who was in Melbourne recently.

India’s elections in April and May is a celebration of democracy and a festival, enjoyed by not only by the Indian people but the world over, with about 700 million voters participating, showing the world how a democracy should function. Dr Gill took a lot of pride in stating this fact and continue to stress that the Indian political system should rightly take priority over the IPL despite cricket being enjoyed by hundreds of millions. To a question whether this deprived the fans of this cricket mad country, he equivocally said that the Indian fans understand the distinction and are in favour of IPL giving way to the elections.
